Brown Rice Salad

1oog brown rice - cooked

tomatoes - diced

capsicum - thinly sliced

baby spinach

broccoli florets

cauliflower florets

cucumber - sliced or diced

italian herbs

spring onion

drizzle white wine vinegar

extra virgin olive oil

salt & pepper


Cook brown rice following the packet instructions or microwave instant pouch.

Heat fry pan and spray with oil.

Place the broccoli and cauliflower in the pan and cook it crispy.

In a cup, combine vinegar, salt, herbs & sprinkle of chicken stock powder.

Stir with a spoon and taste.

Place all the veggies in a bowl and add rice, mix well. Add marinade to the mixture and let it sit for couple minute. Enjoy.

Tip: This is a great side dish for your protein, that combines carbs and veggies intake.
